The processing stage
- Use best practices to process cattle with minimal stress
- Use approved methods to reduce fecal content on hides prior to hide removal
- Hide removal should be done in compliance with standard operating procedures that reduce risk of accidental macroscopic or microscopic fecal contamination on carcass
- Adopt post harvest interventions that protect against bacterial contamination. Interventions may include but are not restricted to hide washes, hot water carcass washes, organic acid carcass washes, steam pasteurization of the carcass etc.
- Regular training of processing staff to ensure best cutting and trimming techniques are followed
- Test and hold, trim destined for ground meat production
- Utilize packaging that minimizes risk of uncooked meat juice escaping
